Looking to expand your salsa repertoire? Tomatillo avocado salsa is a simple but stunning alternative or addition to traditional chip dips.
Ingredients:
- 8 fresh tomatillos, husks removed, rinsed
- 1 serrano pepper, stemmed, seeded, and chopped
- 1 jalapeño pepper, stemmed, seeded, and chopped
- 1 clove garlic, peeled
- 2 tablespoons olive oil
- Sea salt, to taste
- Fresh ground pepper, to taste
- 1/4 cup chopped cilantro leaves
- 1 small lime, juiced
- 1/8 teaspoon cumin
- 2 medium ripe avocados, pitted and peeled
- 1 medium white onion, chopped
Instructions:
Step No.01
Preheat the broiler to high.
Place a rack 5 to 7 inches from the top heating element.
Step No.02
To prepare the tomatillos, cut them in half and set them cut side down on a baking sheet lined with foil. Add serrano, jalapeño, and garlic. Drizzle olive oil and season with sea salt.
Step No.03
Broil tomatillos, serrano peppers, jalapeño peppers, and garlic until charred, approximately 5 minutes. Broil the tomatillos for a further 5 minutes, rotating them occasionally, until they are blackened all over and have turned a dark green.
Step No.04
To remove the roasted pepper skins, place tomatillos, serrano, and jalapeño peppers in a sealed plastic bag and steam for 10 minutes. After the skins have loosened, gently peel them off and discard. To make a milder salsa, remove the ribs and seeds from the inside of the peppers.
Step No.05
Blend the following ingredients:
In a blender or food processor, combine the cooled roasted tomatillo, peppers, garlic, cilantro, lime juice, cumin, salt, and black pepper to taste. Pulse many times to mix. Scrape down the sides of the blender with a spatula if required.
Add the avocado and raw onions, and pulse until smooth. Taste and season with more salt and pepper as needed.

Salsa can be served immediately or stored in an airtight jar in the fridge for up to three days.
