This chicken is a sweet and savory combination that goes well with any Asian or Island-inspired dinner.
Ingredients:
Marinade:
- ¼ cup brown sugar packed
- ¼ cup soy sauce
- 2 tablespoons lime juice about 1 lime
- ¼ teaspoon cayenne pepper
- ¼ teaspoon curry powder
- 3-4 garlic cloves minced
- 1 teaspoon ginger, fresh grated
Chicken:
- 8 chicken thighs boneless, skinless
- green onions, sliced for garnish, optional
Instructions:
Step No.01
In a small bowl, combine all ingredients except the chicken and optional green onions. (See the remark.) Whisk the brown sugar until it has dissolved. Place the marinade and chicken in a Ziploc bag. Place the bag in the refrigerator for at least 4 hours, preferably overnight.
Step No.02
Preheat your grill (or an indoor grill pan or broiler). Spray the frying surface with cooking spray before placing the chicken on it to cook. Cook for 5–10 minutes per side, depending on thickness. Cook the chicken until it reaches a minimum temperature of 165°, as measured by a digital thermometer. For better flavor and texture, aim for temperatures between 170 and 175°.
