Sweet and flavorful Asian-inspired shredded chicken. Perfect with rice, steaming vegetables, lettuce cups, wraps, or salads.
Ingredients:
- 2 lbs boneless skinless chicken breasts (frozen OR thawed)
- 1/3 cup orange marmalade
- 3 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 1/2 tablespoon honey
- 3 tablespoons water broth, or orange juice
- 2 tablespoons chopped fresh ginger
- 6 cloves garlic minced
- 3 teaspoons cornstarch
Instructions:
Step No.01
Place the chicken breasts in a pressure cooker (other cooking techniques are listed below).
Step No.02
In a small mixing bowl, whisk together the marmalade, vinegar, soy sauce, honey, water, ginger, and garlic. Pour mixture over the chicken. Secure the lid on the pressure cooker and cook at high pressure for 15 minutes. When finished, release the steam according to the pressure cooker instructions and use an instant-read thermometer to ensure the meat has reached 165 degrees. (If it hasn’t achieved temperature, simply return the shredded chicken to the sauce and cook until done.)
Step No.03
Remove the chicken breasts and set them on a chopping board. Bring the remaining sauce in the pan to a simmer (use the sauté option on an electric cooker). Combine cornstarch and 3 tablespoons cold water, then pour into a pan.
Simmer until the sauce thickens and then turn off the heat.
Step No.04
Return the shredded chicken to the pot with the sauce.
