A nutritious take on Rice-A-Roni, this easy rice pilaf made with brown rice and angel hair pasta is a great side dish.
Ingredients:
- 2 teaspoons butter, (use olive oil for dairy free)
- 1/4 cup 3/4 ounce angel hair spaghetti broken into small pieces*, wheat, whole wheat or gluten-free
- 1 cup uncooked 10 minute instant brown rice, such as Uncle Ben’s
- 2 cups chicken broth, (or water and chicken bouillon)
- optional, chopped parsley for garnish
Instructions:
Step No.01
In a deep skillet with a fitting lid, melt the butter over medium heat.
Step No.02
Add the rice and broken spaghetti to the melted butter. Cook for 2 to 3 minutes, stirring regularly, until lightly toasted.
Step No.03
When it comes to a boil, add the chicken broth. Lower the temperature to a simmer. After the rice is soft and the stock has been absorbed, simmer it covered for ten to twelve minutes.
Step No.04
After five minutes of cooling off the heat, fluff with a fork.
