Healthy Garlic Butter Roasted Whole Chicken

Ingredients:

  • 4 lb whole chicken patted dry
    1 stick unsalted butter melted
    Salt and black pepper
    1 tbsp lemon juice
    3 garlic cloves minced
    3 tsp fresh thyme chopped
    1 tbsp fresh parsley chopped
    2 tsp fresh rosemary chopped
    For Stuffing
    2 lemon wedges
    1 rosemary spring
    3 garlic clove peeled

    1 carrot quartered

    2 celery stalks chopped
    1 cup dry white wine or low sodium chicken broth

Instructions:

Before cooking, take the chicken out of the refrigerator and let it sit for about half an hour. Preheat the oven to 450°F and set the oven rack in the middle.
