This Ground Turkey Sweet Potato Skillet is ready to eat in less than 30 minutes, and you’ll be surprised by how flavorful it is. It’s the ideal ONE-PAN supper for your family to enjoy!
Ingredients:
- 2 tablespoons extra virgin olive oil
- 1 pound free-range extra-lean ground turkey (you also can use grass-fed ground beef)
- 1 teaspoon garlic clove minced
- ½ cup onions diced
- ½ cup yellow pepper diced
- 1½ cups sweet potato diced
- Salt and freshly ground black pepper
- A pinch of red chili flakes optional
- ½ cup shredded mozzarella cheese (If you’re doing Whole30 or following Paleo diet, don’t add cheese)
- Fresh parsley for garnishing
Instructions:
Step No.01
In a cast iron skillet, heat olive oil over medium-high heat.
Step No.02
Combine the ground turkey and garlic. Use a wooden spoon to break up the turkey while it cooks. Stir occasionally and cook for approximately 5 minutes.
Step No.03
Cook the onions and yellow peppers until they are tender.
Step No.04
Combine the sweet potato, red chili flakes, salt, and pepper.
Step No.05
Cover the skillet and heat until the sweet potatoes are cooked. Remember to stir occasionally. If required, add more olive oil or a splash of water to help the sweet potatoes cook faster.
Step No.06
Preheat the oven to 400ºF as the sweet potatoes simmer.
Step No.07
When the sweet potatoes are cooked, stir in the shredded mozzarella cheese and place the skillet in the oven to melt.
Step No.08
When the cheese has melted, remove from the oven and garnish with parsley.
