Chili Mac and Cheese tastes just like your favorite chili, but with the additional cheesy goodness of mac and cheese! Sensational ground beef meal recipe that takes just over 20 minutes to prepare and is all done in one pot. It’s just fantastically delicious!
Ingredients:
- 1 tbsp olive oil
- 2 garlic cloves , minced
- 1 onion , finely chopped
- 1 red capsicum / bell pepper , chopped
- 500g / 1 lb ground beef (mince) , I use lean
- 800g / 28 oz crushed canned tomato
- 420g / 14 oz can red kidney beans , drained
- 2 1/2 cups (625 ml) beef broth (chicken broth also ok)
- 250g / 8 oz elbow macaroni pasta (elbow pasta), uncooked
- 2 cups (200g) shredded cheese (cheddar, Monterey Jack, tasty cheese)
- 1/4 cup coriander / cilantro finely chopped, for garnish
SPICES (HOMEMADE CHILI POWDER):
- 1 tsp cayenne pepper or pure chilli powder (adjust spiciness to taste) (Note 1)
- 2 tsp paprika powder
- 2 tsp cumin powder
- 1 1/2 tsp onion powder (can sub garlic powder)
- 1 tsp dried oregano
- 1/2 tsp black pepper
- 1 1/4 tsp salt
Instructions:
Step No.01
Heat oil in a big pot over high heat. Cook for 1 minute with the garlic and onion. Then, add the capsicum and sauté until the onion is transparent.
Step No.02
Add the beef and simmer, breaking it up as needed.
Step No.03
Once the beef has turned from red to brown, add the remaining ingredients, excluding the cheese. Stir, bring to a simmer, then reduce the heat to medium.
Step No.04
Cover and boil for 12 minutes, or until the macaroni is al dente, which means just cooked but still somewhat hard. It should be juicy but not overly liquid
Step No.05
Turn off the stove but keep the saucepan on the stove. Stir in half of the cheese; it should be slightly saucy. Adjust the salt and pepper to taste. Top with the remaining cheese, replace the lid, and allow to melt for about 2 minutes
Step No.06
Sprinkle with coriander if wanted and serve immediately.
