Easy Cheesy Baked Tortellini Pasta

A rich and satisfying meal that is quick to prepare on a weeknight but elegant enough for company!

Ingredients:

  • 4-5 cloves garlic minced
  • 6-8 ounces grape or cherry tomatoes halved
  • 1-2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste
  • 1 28- ounce can crushed tomates
  • 1 teaspoon sugar
  • 2 teaspoons Italian seasoning
  • Pinch red pepper flakes
  • Pinch baking soda to neutralize the acid
  • Salt and freshly ground pepper to taste
  • 20 oz. refrigerated tortellini something with sausage or chicken and cheese works great in this recipe, but your favorite variety will work!
  • 8 ounces mozzarella cheese grated
  • 1/4 cup freshly grated Parmesan cheese

Instructions:

Step No.01

Heat a big saucepan of salted water to a boil.

Step No.02

While the water is heated, warm the olive oil in a big, oven-safe skillet (if possible). Season tomatoes and garlic with salt and pepper. Cook for 4-5 minutes, stirring often, until the tomatoes start to burst.

Step No.03

Bring the remaining sauce ingredients to a simmer, then cover and reduce heat. Season to taste with salt and pepper, then cover and boil, stirring periodically.

Step No.04

Preheat the oven to 400 F.

Step No.05

Add the tortellini to the boiling water and cook according to package instructions. Remove the sauce from the heat. Drain the tortellini and place it in the sauce saucepan, or use a slotted spoon to extract it from the water and add it to the sauce. Gently stir until combined, then top with shredded mozzarella and parmesan. Place the skillet in the preheated oven for about 4-5 minutes, or until the cheese is melted and bubbling. Serve immediately.
