Make Meatless Monday enjoyable with my vegan sloppy joes, which are packed with plant protein, fiber, and hidden vegetables you won’t notice!
Ingredients:
- 2 tablespoon olive oil
- ½ medium onion minced
- 2 cloves garlic minced
- 1 medium red or green bell pepper diced
- 1 cup carrots shredded
- salt and pepper to taste
- 1 teaspoon ground cumin
- ¼ teaspoon paprika
- 1 teaspoon chili powder
- 1 tablespoon brown sugar optional
- 1 + ¼ cup tomato sauce
- ⅓ cup lower sugar barbecue sauce
- 1 tablespoon balsamic vinegar
- 3 cups cooked lentils
For serving:
- 4 whole wheat hamburger buns
- 4 slices of vegan cheese
Instructions:
Step No.01
Cook lentils as directed on the package, or rinse and drain canned lentils.
Step No.02
While the lentils cook, heat a large skillet over medium heat. Once heated, add the oil, onion, garlic, bell pepper, and carrot. Season with salt and pepper. Stir. Cook for 4-5 minutes, stirring frequently.
Step No.03
Next, combine the brown sugar (if using), cumin, chili powder, and paprika. Stir in the tomato sauce, barbecue sauce, and balsamic vinegar. Once the lentils are cooked, add them to the skillet and toss to incorporate.
Step No.04
Cook the mixture over medium-low heat, stirring periodically, until completely warmed through and thickened, about 10 minutes. Adjust seasonings to taste.
Step No.05
Serve with hamburger buns and dairy-free cheese.
