Best Pressure Cooker Chili Lime Chicken Recipe

Quick and easy chicken with Latin flavors, ideal for meal prep, tacos, salads, and more.

Ingredients:

  • 2 pounds boneless skinless chicken breasts
  • 2 medium or large sized limes
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt use a little less is substituting table salt
  • 1/4 teaspoon black pepper
  • 6 cloves garlic finely minced or pressed
  • 1/2 teaspoon liquid smoke

Instructions:

Step No.01

If the chicken breasts are more than an inch thick, cut them in half. Place the chicken in a pressure cooker pot. Squeeze in the juices from both limes. Sprinkle all seasonings and liquid smoke over the chicken, then add garlic. Use clean hands to apply the spice mixture to all sides of the chicken.

Step No.02

Secure the cover on the pot and cook for 6 minutes under high pressure. When finished, allow 5 minutes to rest before releasing steam. (If you’re short on time, simply do a quick steam release). Check the temperature of the chicken using an instant-read thermometer and ensure it is at least 165 degrees.

Step No.03

Return the shredded chicken to the saucepan and stir in juices. Season with salt and pepper to taste.
