This Chicken a la King recipe is cooked from scratch with a creamy mushroom sauce, peas, pimentos, and succulent chicken. Pair this with rice, egg noodles, biscuits, or pastry!
Ingredients:
Sauce:
- 1 tablespoon olive oil
- 1 ¼ lbs. boneless skinless chicken breast, see notes
- salt/pepper, to taste
- ½ cup dry white wine, see notes
- 5 tablespoons butter
- 8 oz. baby bella mushrooms, can sub white button
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1/3 cup flour
- 3 cups half and half
- 1 cup chicken broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon hot sauce, I use Franks hot sauce
- 1 chicken bouillon cube
- ¾ cup peas, I use frozen
- 4 oz. drained pimentos
Seasonings:
- ½ teaspoon EACH: dried basil, parsley, thyme, onion powder, mustard powder
- ¼ teaspoon ground sage
- 1/8 teaspoon pepper, paprika

Prep Work:
Step No.01
In a large measuring cup with a spout, combine the half & half, chicken broth, Worcestershire sauce, spicy sauce, and seasonings; put aside. Before you begin, measure out all of the remaining ingredients.
Cook the Chicken:

Pat the chicken dry and season both sides with salt and pepper. Heat olive oil in a 4 ½-quart soup pot on medium-high heat.

Add the chicken and heat for 3 minutes per side, or until a brown crust forms. Remove from heat. The center will still be undercooked.
Step No.03
Allow the chicken to rest for 10 minutes before cutting into bite-sized pieces. The chicken will continue cooking in the sauce, which will enhance its homecooked flavor.
Make the Sauce:
Step No.01
Turn the heat to medium and pour in the wine. Use a silicone spatula to “clean” the pot’s bottom and sides. Combine the mushrooms, onions, and garlic. Cook for 5–6 minutes, or until softened.

Stir in the butter and flour until thoroughly combined. Cook for 2 minutes while stirring continuously.
Step No.03
Reduce the heat to medium-low. Add the half-and-half mixture (from step 1) in small amounts, stirring constantly. Scrape any remains from the bottom of the saucepan as you go. Add the chicken bouillon.
Step No.04
Set the heat to medium-high and bring to a boil, then lower to a simmer. Return the chicken and cook, uncovered, for 10 minutes.
Step No.05
Combine the peas and pimentos. Simmer uncovered for another 5-10 minutes, or until the desired consistency is achieved. The longer it simmers, the thicker it will be.
Step No.06
Remove from the heat and serve over egg noodles, pasta, rice, biscuits, or pastries.
