My Roasted Broccoli Salad is topped with crunchy panko, cashews, and a healthy bang bang sauce. A popular side and salad!
Ingredients:
- 1 lb broccoli about 2 large heads
- 3 shallots finely sliced
- 2 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- Juice of ½ a lime
- ¾ cup unsalted cashews chopped
- 1 small head of radicchio* chopped
- 1 cup panko bread crumbs
- ¼ cup sesame seeds
Bang bang dressing:
- ¼ cup plain 2% Greek yogurt
- 1 tablespoon mayonnaise** optional see notes below
- 2 tablespoon sriracha sauce
- 1 tablespoon honey
- Juice of ½ a lime
- 1 tablespoon sesame oi
Instructions:
Step No.01
Preheat the oven to 425 F.
Step No.02
On a baking sheet lined with parchment paper, arrange the broccoli florets and shallots. Drizzle with olive oil, season with salt, black pepper, and garlic powder, then squeeze the lime. Toss to blend.
Step No.03
Once coated, place the broccoli in a single layer on the pan. Bake for around 30 minutes, stirring the pan halfway through to ensure that both sides of the broccoli are roasted.
Step No.04
While the broccoli is cooking, make the bang bang dressing by mixing together Greek yogurt, mayonnaise, sriracha, honey, lime juice, and sesame oil.
Step No.05
Allow the broccoli to cool before transferring it to a large salad bowl. Top with cashews, radicchio, breadcrumbs, and sesame seeds. Drizzle with bang bang dressing and toss to mix.
