My homemade ground chicken nuggets are a healthy alternative to a childhood favorite. Hidden vegetables, rich protein, and only 15 minutes to prepare.
Ingredients:
- 1 lb lean ground chicken
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon ground paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon mustard powder
- 1.5 cup riced or finely diced cauliflower with excess water squeezed out if using frozen, see notes below
- ¼ cup oat flour
- ½ cup Italian breadcrumbs
Instructions:
Oven method:
Step No.01
Preheat the oven to 425 F. Line a baking tray with parchment paper.
Step No.02
In a mixing bowl, combine the ground chicken, eggs, seasonings, riced cauliflower, and oat flour. Mix well.
Step No.03
Divide chicken meat into 15 nuggets (about 2 heaping tablespoons per nugget) by shaping meatballs into egg shapes and pushing down until ½ inch thick.
Step No.04
Coat each nugget with a thin layer of breadcrumbs. Arrange on the prepared baking tray and bake for 15 minutes. After 15 minutes, flip the nuggets and bake another 15 minutes.
Air fryer method:
Step No.01
Preheat the oven to 390 F.
Step No.02
In a mixing bowl, combine the ground chicken, eggs, seasonings, riced cauliflower, and oat flour. Mix well.
Step No.03
Divide chicken meat into 15 nuggets (about 2 heaping tablespoons per nugget) by shaping meatballs into egg shapes and pushing down until ½ inch thick.
Step No.04
Coat each nugget with a thin layer of breadcrumbs. Arrange in your air fryer basket (being sure not to overcrowd it) and cook for 15 minutes, flipping halfway through.
