When I was in middle school, I used to watch Food Network every day after school. Everyday Italian has a popular episode in which Giada made roasted potatoes with cippolini onions. That was the first time I made roasted potatoes by myself.
Ingredients:
- 2 tablespoons olive oil
- 3 garlic cloves, finely grated
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon cayenne (optional)
- 1 tablespoon finely chopped parsley, plus more for serving (optional)
- 1 1/2 pounds (24 ounces) yellow baby/new potatoes, cleaned and patted dry
- 2 ounces (nearly 3/4 cup) grated Parmesan (see recipe note)
Instructions:
Step No.01
Preheat the oven to 400° Fahrenheit.
Place a rack in the center of the oven. Line a rimmed baking sheet with parchment paper.
Step No.02
To make the olive oil combination, combine olive oil, grated garlic, kosher salt, pepper, cayenne (optional), and parsley. Stir to mix.
Step No.03
To prepare the potatoes, cut them in half and toss them in olive oil to prevent browning. Toss the potatoes in the oil mixture until coated.
Toss the potatoes with the Parmesan until lightly coated, taking care not to clump the cheese and knock it off each potato half.
Step No.04
To roast potatoes, put them in a single layer on a prepared baking sheet, cut side down. Scrape any loose Parmesan mixture from the bowl onto the potatoes’ flat surfaces. It’s fine if the potatoes are close together in the pan.
Roast the potatoes until fork-tender and the Parmesan is a deep golden brown, about 25 to 35 minutes, flipping the pan halfway.
Step No.05
To finish and serve, remove the baking sheet from the oven and allow the potatoes set for 5 minutes. This allows the Parmesan to cool slightly before settling into its crispy, sharp texture.
Flip the potatoes over (with a thin metal spatula if necessary) to reveal their golden brown, cheesy surface, then transfer to a serving plate. Top with additional parsley and serve immediately.
Leftover potatoes can be refrigerated in an airtight container for up to four days.
