A family favorite, this meatloaf recipe with brown gravy is slightly healthier than most as it uses ground turkey and beef in addition to oats and is finished with a flavorful brown gravy. Comfort food at its best!
Ingredients:
- 1 tablespoon extra virgin olive oil
- 1 large yellow onion, chopped fine
- 2 medium celery stalks, minced fine
- 1 1/2 pounds 90% lean ground beef
- 1 1/2 pounds 93% lean ground turkey
- 1 tablespoon chopped parsley, plus more for garnish
- 1 tablespoon chopped fresh thyme leaves
- 3 large eggs, lightly beaten
- 1/2 cup fat free milk
- 4 teaspoons kosher salt
- 1 3/4 cups raw quick oats
- Beef Gravy: (makes 3 cups)
- 1/4 cup all purpose or gluten-free flour
- 3 cups salted beef broth or stock
- 1 thyme sprig
- fresh black pepper, to taste
Instructions:
Step No.01
Set the oven’s temperature to 350F. Line a sheet pan with foil or parchment paper.
Step No.02
In a big skillet, warm the olive oil over medium heat. Add the onion and celery and simmer, stirring periodically, for about 7 minutes, or until the veggies are tender.

Allow it to cool down a little.
Step No.04
Mix the beef, turkey, eggs, milk, thyme, parsley, and salt and pepper in a big bowl.

Using clean hands, thoroughly mix the oats and onion mixture until thoroughly combined.
Step No.06
Shape into a single, long loaf or two, smaller loaves. Bake for 50 minutes, or until the center of the thermometer registers 160 degrees.

Take out of the oven and give it a 10-minute rest

When the meatloaf is almost done, in the meantime, put the cold beef broth, flour, and thyme in a small saucepan. Whisk vigorously over medium heat until it comes to a boil, then simmer over medium-low heat for approximately five minutes, stirring from time to time, until it thickens.
Step No.09
If there are any pan drippings, add them to the gravy and stir for an additional minute. After adding more salt and pepper to taste, throw away the thyme.
Step No.10
Cut the bread into 24 pieces (if you’re making one loaf, or 12 pieces each if you’re making two), then serve hot with the gravy. If desired, garnish with parsley.
