Gluten Free Bourbon Chicken Recipe

Dinners with chicken are always a hit, and this recipe for bourbon chicken is sure to please every person at the table. whiskey chicken is made by combining a little amount of whiskey, apple juice, and soy sauce to create a sticky-sweet sauce that is used to coat diced, lightly breaded chicken thighs. It is similar to sesame or orange chicken (just change the fruit liquids!). This simple dinner recipe is sure to please any crowd and, best of all, takes less than 30 minutes to prepare! Serve it over rice and garnish with toasted sesame seeds and scallions.

Ingredients:

  • 2 lb. boneless skinless chicken thighs
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 2 Tbsp. cornstarch
  • 1/4 c. vegetable oil
  • 3 cloves garlic, chopped
  • 1 Tbsp. grated fresh ginger
  • 1 c. + 1 tbsp. chicken stock, divided
  • 1/2 c. apple juice
  • 1/4 c. bourbon
  • 1/2 c. soy sauce
  • 1/2 c. packed brown sugar
  • 2 Tbsp. apple cider vinegar
  • 1/4 tsp. crushed red pepper flakes
  • 1 1/2 tsp. cornstarch
  • White rice, for serving
  • 1 Tbsp. toasted sesame seeds
  • 2 scallions, thinly sliced

Directions:

Step:No:01

Chop the chicken into small, manageable pieces. In a big basin, toss the chicken with the cornstarch, salt, and pepper until well covered.

Step:No:02

In a large nonstick skillet, heat the vegetable oil over medium-high heat until it is quite hot. Place half of the chicken in a single layer and cook for about 6 minutes, rotating occasionally, until it is crispy, well-browned, and cooked through. To move the chicken to a plate, use a slotted spoon. Transfer to the same plate and repeat with the remaining chicken.

Put the skillet back on the medium burner. Cook the ginger and garlic in the skillet for approximately a minute. Add the apple juice, bourbon, soy sauce, brown sugar, apple cider vinegar, crushed red chili flakes, and one cup of chicken stock. Mixing until well blended. Simmer for a while, stirring now and then, until reduced by about half.

In a small dish, whisk together the cornstarch and the remaining 1 tablespoon of chicken stock. Add to the skillet and mix thoroughly with a whisk. After bringing to a boil, simmer for one minute to thicken. To fully reheat and coat in sauce, add the chicken to the skillet and cook for an additional one to two minutes.
