My favorite chicken breast dish is this street corn chicken from Mexico. It is created with little time and effort and has all the characteristics of Mexican elote, with delicate chicken covered in a creamy corn mixture.
Ingredients:
- 2 lbs boneless, skinless chicken breast, (4-6 thin chicken breasts)
- ▢3 cups sweet corn, (2 cans, drained)
- ▢1/4 cup mayonnaise
- ▢1/4 cup sour cream
- ▢1/2 tbsp lime juice
- ▢1½ tsp chili powder
- ▢1/2 tsp salt
- ▢1/2 tsp garlic powder
- ▢1/4 tsp cayenne pepper, (optional)
- Topping
- ▢1/4 cup queso fresco, crumbled
- ▢1/4 cup cilantro, chopped
Instructions:

Mix the sour cream, mayonnaise, chili powder, lime juice, and sweet corn together in a big bowl.

Place the slender chicken breasts flat in a casserole dish. Next, add cayenne pepper, garlic powder, and salt for seasoning. Over the top of the chicken, evenly distribute the corn mixture.

Bake, uncovered, at 350˚F for 30 to 40 minutes, or until the chicken reaches an internal temperature of 165˚F. After that, take it out of the oven and sprinkle chopped cilantro and crumbled queso fresco on top.
